A person that has trouble with their eyes adjusting from light to dark may have a vitamin A deficiency. Carrots are rich in Vitamin A which is why eating them or drinking their juice is good for dry skin. Skin disorders, such as psoriasis, may also be signs of Vitamin A deficiency. Carrots also aid in the digestive process when taken 20 minutes before a meal because they promote the production of digestive fluids.

Carrots are also good for healthy lungs because the Vitamin A nurtures the respiratory system. Carrots can even counteract the effects of smoking. If someone is constantly exposed to second hand smoke, a diet rich in carrots could save their life. The lycopene in carrots gives them their color and it has been shown to inhibit the growth of lung cancer cells. Lung cancer is the deadliest form of the disease in the United States and the consumption of carrot juice could detour its growth. White carrots lack the high lycopene levels of dark orange carrots so they may not have the same cancer fighting effects.

Everyone can benefit from a diet rich in carrots but this is especially true for nursing mothers. Carrot juice enriches the mother’s milk and supplies the infant with Vitamin A. Carrots even help to meet the demand for more calcium during pregnancy.

Given all the health benefits associated with the consumption of carrot juice, it’s a wonder more people don’t make it a regular part of their routine. They promote healthy skin, regulate blood sugar, improve night vision and improve a nursing mother’s milk. Carrots and carrot juice offer so many benefits that they just may be the world’s most perfect food.
